Traditional Valencian Paella

Paella is a traditional Spanish dish originating from the region of Valencia. There are different recipes for preparing paella, but here is a basic version of the original Valencian paella:

Green pepper 1 cut into strips
Red bell pepper 1 cut into strips
Chicken broth 1 litre
Safran a pistil 1 tbsp
Olive oil
Salt pepper

In a large paella or a heavy-bottomed skillet, heat some olive oil over medium heat and brown the chicken and rabbit. Remove the pieces of meat and reserve them.

    Add the onion, garlic, tomatoes, peppers and mussels, cockles and cuttlefish to the pan and sauté for a few minutes. Add the rice and mix well. Add the chicken broth, saffron, and season with salt and pepper. Add the reserved pieces of meat and the prawns and mix.


Lower the heat and cover. Simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.

Serve hot with lemon and chopped parsley.
