Hot water 15ml
    Place the saffron threads in a bowl and add 1 tablespoon of hot water. Let sit and infuse while you grind the pistachios. Put the pistachios in a food processor and pulse until finely ground. Place the Brussels sprouts in a steamer and cook for 3 to 5 minutes, depending on their size, until they are cooked and tenderMeanwhile, add the butter, the ground pistachios and a pinch of salt to the bowl with the saffron water and mix until everything is is homogeneous. Place a skillet over medium heat and add the cooked Brussels sprouts. Stir in the pistachio butter mixture and stir for a few minutes to melt and coat the choux. Finish by sprinkling with the chilli and another pinch of salt to season, then serve hot.
