Butter 250g Choose a quality butter
Saffron pistils 10 to 15 filaments Quality saffron
This
    Crush fine strands of saffron in a mortar and pestle. Mix with softened butter until the saffron is incorporated into the butter. Salt, taste and check seasoning, add a little more salt if necessary, transfer to a serving bowl, wrap in cling film and store in the fridge or freezer until ready to use. If freezing - transfer butter from freezer to refrigerator or room temperature a few hours before serving.
