The Saffron Guide

In this guide dedicated to saffron, we will talk about the different problems and solutions to buy real quality red saffron.

  • How to choose your saffron ?

Choosing your saffron pistils is sometimes not an easy mission, indeed many sites offer saffron and very often without mentioning the details on the product as the date of manufacture, the date of exp[riation of the product, its GTIN code (product reference number and traceability). At MonaFrance, we have the concern of transparency on our saffron, on request we provide the documents proving its origin and traceability. We also explain how to check by a very simple exercise if your saffron is real or counterfeit (see our article). It is important that your saffron filaments are delivered whole, the packaging must have a protective cap to avoid that the pistils are crushed during the delivery.

  • Buy saffron online

Globally it works for any product that we buy online. It is imperative to check the reliability of the online site which proposes the sale of saffron.

    • Check that the site is secured and that it presents in its address bar the mention HTTPS, if the S is missing then you are on a not secured site and thus your data can be stolen.
    • A quality website has a physical address and easily verifiable contact information such as phone number, company registration number (if based in France), legal notices and a refund policy.
    • Check Google reviews, often buyers have left a review about their online shopping experience and so it allows you to see if the reviews are positive or negative.
    • The site must be reachable quickly either via email, phone or online chat.
  • The price of saffron

In this chapter, many parameters are to be taken into consideration, indeed the price of saffron can vary enormously according to the origin, the quality or if the saffron is in pistils or in powder. A saffron of quality has to be paid and the reasons are numerous. The production is meticulous and requires a lot of attention because the saffron flowers (Crocus Sativus) must be handled with the greatest care. To produce 1g of saffron you need a lot of flowers and the picking is done by hand only and usually during a short period of the day. The price varies according to the country of origin. Iranian or Spanish saffron are generally cheap but of lower quality than other countries. French saffron is often very expensive because producing such a spice in France is expensive (labor, packaging). Moroccan saffron is considered today as a very sought after saffron because of its quality and also because the Moroccan Ministry of Agriculture has made it a protected local product. The price for one gram can go from 9 euros to 40 euros.

  • The provenance of the saffron

Only a few countries are at the head of the world saffron production. Iran is the first producer of saffron with about 80 tons per year followed by Spain in 2nd position, Morocco rises to the 3rd place thanks to the Green Morocco plan that the government has implemented by expanding the agricultural land of saffron and offering a label of the land to cooperatives that meet stringent manufacturing criteria, then come India and Greece.

  • The certifications of saffron

Because on the market, a lot of saffron is counterfeited, some countries have established labels and certificates of authenticity to prove the origin of your saffron. Morocco for example proposes several certifications such as the PDO, the protected appellation of origin, a bit like the AOC wines in France. You can also often find certified organic or fair trade labels. When you buy saffron, be sure to check if the site in question offers these certifications, a guarantee and assurance that your saffron is genuine and environmentally friendly.

  • Cooking with saffron

Of course the first use of saffron nowadays is in cooking. This majestic spice has the ability to flavor your dishes such as paellas, risotto a la Milanese. But now, its use has been widely democratized in other dishes and even desserts made with saffron. With the explosion of social networks like TikTok or Instagram, many chefs and food lovers are showing us. At one time, saffron was used a lot to dye clothes and in the field of alternative medicine.

  • The benefits of saffron

In this last part, we will talk about the benefits of saffron and hang on, they are numerous. Indeed, this magic spice has real powers on many ailments that affect our society and it is also an excellent antioxidant. Saffron is efficient to fight against:

    • mild depression
    • Alzheimer
    • Menstrual problems
    • Diabetes
    • Eye problems
    • Decreased libido
    • Liver problems

The Moroccan Saffron

The Saffron! The red gold of spices

If you are wondering what saffron is, then you have come to the right place. Learn more about these benefits and the history of saffron consumption. The spice is extracted from the Crocus sativus plant, whose flower threads are crimson crimson. Its used for seasoning and its coloring is one of the most expensive spices in the world.

What is the best Saffron in the world? The word Saffron is derived from the crocus flower. Crocus Sativus belongs to the Iridaceae family and has a long cultivation history. The stigmas, present on the distal end of the carpel, are used to produce Saffron.

Although Saffron is grown in many parts of the world, it is mainly produced in Morocco in the town of Taliouine. In the United States, Saffron is grown in Pennsylvania and Washington. It is harvested by hand in the fall and early in the morning. Finding the perfect saffron isn't easy, but if you know where to look, you'll find plenty of varieties. In addition to Afghan Saffron, Spanish Saffron, Moroccan saffron more precisely from Taliouine is considered today as the best saffron in the world.

Saffron has an amber flavor and is close in scent with hay. Saffron is also used as a condiment for rice in several countries. It is a spicy and sweet herb that can be used for various purposes. Apart from a salaried dish, Saffron is also used to make alcoholic beverages. The Saffron alcoholic drink used in the Benichon Festival is made from Saffron. It also has anti-cancer properties and is used in many other dishes.

The answer to this question depends on the source of the SAFRAN. Saffron from Morocco is famous all over the world and rivals saffron from India, Spain and Iran. Jean-Marc Pillet, French gastronomic critic, proclaimed Taliouines, the best Saffron in the world for its refinement and its flavor but also for its color. It is also produced in Safranbolu in Turkey and in small quantities in California.

France has been producing saffron for more than five centuries. The Taliouine region is a key producer of Saffron, with the local community championing Taliouine AOP. Although Iran is the leader in Saffron production, India is the second largest producer, supplying around 30 tons.
